Peanut Butter Cookies (no baking involved)

Peanut Butter Cookies

I saw this recipe on pinterest the other day, and decided to try it out.

The recipe takes literally no-time to make and requires no baking. It is full of protein, vegan and gluten-free.

I tweaked it a bit, and I'm sharing here the results. I called them my peanut butter and jam cookies.

I would like to try another test to this recipe before I call it a day, it needs some crunch is a bit to soft.

If you try it, let me know how it goes.

Ingredients:

2 cups of oats

11 dates (pitted)

1/2 cup of peanut butter

1/3 cup of almond milk

1 teaspoon of salt

1 teaspoon of cinnamon

Directions:

1. Place oats, salt and cinnamon in the food processor, pulse for 5 minutes

2. Place the rest of the ingredients and pulse again, it will become an homogenous dough.

3. Make balls and pat them down with a fork forming a little coin-cookie.

4. Dress with strawberry jam.
