Dumplings (Beef, Chicken & Shrimp)
I always crave good Chinese food, but did not have the time or the inspiration to do any complicated cooking, so this was redemption-time for my tummy.
It is funny, once I get into it... I can't stop! You'll see what I mean with this recipes.
These dumplings are ridiculously-delicious, the dough is bought ready. I made a batch of beef, chicken and shrimp. These are the perfect meal-started/appetizer, do not forget how good these are in a dumpling-soup.
This recipe yields about 20-25 dumplings of each feeling.
Ingredients for the beef filling:
100 gr. minced beef
1/2 tablespoon of soy sauce
1 teaspoon of cornflour
1 tablespoon of chives (chopped)
1 teaspoon of grated ginger
2 teaspoon of sesame oil
1/2 Chinese 5 spices
salt and pepper to taste
Ingredients for the chicken filling:
100 gr. minced chicken
1/2 tablespoon of soy sauce
1 teaspoon of cornflour
1 tablespoon of chives (chopped)
1 teaspoon of grated ginger
2 teaspoon of sesame oil
1/2 teaspoon of turmeric
1/2 teaspoon of mustard seeds
1/2 Chinese 5 spices
salt and pepper to taste
Ingredients for the shrimp filling:
75 gr. of minced shrimp meat
1/2 tablespoon of soy sauce
1 teaspoon of cornflour
1 table spoon of mashed garlic
2 tablespoon of sesame oil
salt and pepper to taste
Ingredients for the dipping sauce:
3 tablespoons of soy sauce
1/2 tablespoon of chery balsamic vinegar
1 tablespoon chives (chopped)
1/2 tablespoon of toasted sesame seeds.
Directions for the beef filling:
1. Mix all together cover and set in the fridge until ready to assemble.
Directions for the chicken filling:
1. Mix all together cover and set in the fridge until ready to assemble.
Directions for the shrimp filling:
1. Mix all together cover and set in the fridge until ready to assemble.
Directions for the dipping sauce:
1. Combine all ingredients and serve in a bowl
Assembling:
1. Place filling unto the rounds (dough) and bring ends together. Press the edges firmly so it stays sealed.
2. Steam for 6 minutes and then you can sear them in a teflon pan with a bit of oil. Serve warm.
Tips:
1. There are different ways of closing them, some more elaborate than others, I went very free style.
2. Deep-frying is an option.
3. Sweet and sour sauce will complement any spicy beef.
4. Salt-cold would make a nice filling.
