Blackened Spaghetti
Well, it's been a while since I posted any recipe. I've been busy lately, do not worry I've been eating petty good.
I love pasta (you may have read this already), ever since I learned how to make it from scratch I could have pasta any time, any way.
Spaghetti is my favorite shape though. This time I took the adventure of making "blackened spaghetti", with calamari (squid) ink.
Sounds very complicated, bit it is nothing of that sort.
This recipe yields 4 portions.
Ingredients:
1 1/2 cups of flour (AP flour)
2 large eggs
1 tablespoon of olive oil
1 tablespoon calamari ink
salt to season
Directions:
1. Knead the flour, eggs, salt, oil, ink and salt, until it forms a dough. Let the dough rest for 30 minutes.
2. Then pass the dough through a pasta maker until thin (usually 5 times), going from the widest setting to the thinest setting.
Tips:
1. This recipe, works as well without the calamari ink, for normal pasta.
2. Squid ink can be found at any specialty grocery store.
3. If you don't owned a pasta maker, you can just roll the pasta and cut strings with a pizza cutter.
