Khobez (or Pita)

I love baking bread, I think it's my favourite thing to bake. The aroma, the warmth of the oven it is all very amusing to me.

Khobez means bread in Arabic, and some countries call bread life, and I love that, I love the idea of something as ancestral and as simple can be defined as life.


This recipe yields 10 pieces of bread.

Let's get baking... shall we?



Ingredients:

2 1/2 cups of flour (AP or bread flour)

1 tsp Salt

1 tbsp Sugar

2 tsp Yeast

1 tbsp Olive oil

1 cup of warm water

Directions:


  1. Bloom the yeast in the warm water, adding the sugar and then oil.

  2. In a bowl add flour, salt.

  3. Mix dry ingredients (step 2) with liquid ingredients (step 1).

  4. Proof (code for let it rest) the dough for two hours.

  5. Separate the doughy into 10 small balls and proof for a second time (around 30 min).

  6. Flatten the balls and set in a baking tray.

  7. Bake for 5 to 7, until puffed at 190 degrees centigrade.

  8. Remove and cover them with a dish towel so they do not harden. They are ready to be served. Nothing like warm bread from the oven.
