Grilled Cheese & Tomato Jam
Who doesn't love a grilled cheese sandwich? I haven't met anyone yet that doesn't. I'm all about cheese, really!
This sandwich is special for two reasons: one it is super gooey and secondly it combines a sweet and salty combination that it is to die for.
This recipe yields a cup of tomato jam & 2 grilled cheese sandwiches.
Ingredients:
6 ripe tomatoes (peeled and seeded)
1 clove garlic (mashed)
1/4 Balsamic vinegar
2 1/2 tablespoons of sugar
a pinch of salt
2 Burger buns
4 slices of Munster cheese
2 tablespoon of butter
Directions:
1. In a sauce pan place: tomatoes, garlic, vinegar, sugar and salt, over low heat, let it simmer for about 2 hours until all liquid is evaporated. That will give you the delicious jam.
2. Slice bread buns in two and butter side down of the bread.
3. Spread a tablespoon of the tomato jam on each side. Add 2 slices of cheese and top with the other piece of bread.
4. Place on a grill or a panini press, and let it heat through until cheese is melted and bubbly.
