I’m a big fan of noodles. Any noodles, be it Italian or Asian count me always in.

This soup although very simple is very comforting. It has the right amount of all the things I love.

Mushrooms which I can probably eat every day and not to mention the colorful peppers, and the healthy grilled chicken.

This recipe yields 2 portions.


Ingredients:

1 package of the glass noodles

1 cup mushrooms (could be shiitake) 1⁄2 yellow bell pepper 1⁄2 orange bell pepper 6 cups of chicken broth (bought or home-made)

2 grilled chicken breast

2 strings of Bokchoy 1⁄2 red bell pepper 1 tablespoon of black sesame seeds


Directions:

  1. Bring the broth to boil and cook for 2 minutes the glass noodles, set the noodles a side and keep the broth on low simmering.I n a pan roast: peppers, bokchoy and mushrooms.

  2. The next step is to assemble all ingredients neatly in a bowl and pour over the broth. Sprinkle with the sesame seeds.

Tips:

  1. Pumpkin (specially Chinese pumpkin) would be a great add. There is no right or wrong.
