Recently, I did a detox week. Detoxing from refined carbohydrates, sugars and meat. Yes, I've said, I was vegetarian for a whole week.

The first 3 days were the hardest, I craved meat on every single meal (kind of an withdrawal effect). On the second day of the detox, I had to eat this quinoa salad, and I was in heaven.

The first time I tried quinoa, some years ago, I really didn't like the flavor, for some reason then it taste it too "healthy"...


This time around, was different I really appreciated the flavors. Although I was never hungry on this detox, I could not stop from thinking about a big juicy steak. The night I had this salad, my cravings ceased and I felt very satisfied and happy; and although I know now for sure, I could never become vegetarian, it was very satisfactory to clean my body from all carb and meat toxins. This salad will remain in the my regular menu for years to come.

This recipe yields 4 portions.

Ingredients:

1/2 cup of red quinoa

1/2 cup of white quinoa

1/2 cup of cherry tomatoes (halved)

1/2 cup of feta cheese (cubed)

1/2 cup of black olives

1/2 cup of green olives

1/2 cup of cucumber

1 tablespoon of olive oil

1 tablespoon of lemon (juiced)

Salt & Pepper to taste

Directions:

1. Cook the quinoa as per package directions. Let rest for a few minutes to cool off.

2. In a big bowl, mix all the ingredients, include the quinoa (warm quinoa will be perfect to melt and absorb all flavors).

Tips:

1. If you want the meal to be fully vegan, substitute the cheese for cooked cauliflower florets, chopped in small pieces.

2. I've been making this salad quite frequently, I've also substituted the cucumbers for zucchinis and this works very well too.
