Sfiha (Lebanese Meat Pie)

Whenever I make these pies, I have to make a lot of them, as these get eaten in no time.

I usually eat quite a few of these also, which make them so incredibly dangerous; if you are watching your waist line.

They are pillows of heaven filled on Lebanese pride and flavors.

This recipe yields 20 units of each filling.

Ingredients:

For the Dough:

3 cups of all-purpose flour

1/2 cup of yogurt

1/2 cup olive oil

½ teaspoon of salt

½ tablespoon dried yeast

1 teaspoon sugar

1/3 cup warm

For the filling:

1 medium onion (chopped)

1/2 teaspoon black pepper

2 teaspoon salt

300 gr. of minced beef

2 medium tomatoes (chopped)

1 tablespoon of all spices

A handful of pine nuts to garnish (optional)

Directions:

1. In a bowl mix: flour, salt, sugar and yeast; then add the ¼ cup of olive oil, yogurt and warm water. Mix until a smooth dough. Let it rest for at least 1 hour. Then make 20 equal balls.

2. In another bowl mix: the beef, one onion, tomatoes and all spices, mix well and keep cool.

3. Flatten each ball into a round and filled with the spinach mixture closing it into small corners transforming the round into a square, garnish with pine nuts and bake for 30 minutes or until meat completely cooked.

4. Serve both pies warm.

Enjoy!
