This is a lighter version of the well-known orange chicken, which I also happened to have added mandarine chunks, just because, why not?...

This version is lighter because I avoided breading the chicken and I used chicken breast. I also wanted some greens, and snow peas are naturally sweet so I went with it.

This recipe yields 2 portions.

Ingredients:

2 chicken breast (chopped)

1/2 tablespoon sesame oil

2 cups orange juice

1 tablespoon of ginger (chopped)

1 mandarine (zest & chunks extracted)

2 tablespoon of brown sugar

1 tablespoon of corn starch (dissolved on a 1/2 cup of water)

1 cup of snow-peas.

1 tablespoon of sesame seeds

Salt & Pepper to taste

Directions:

1. In a frying pan: saute the chicken in the oil, set it separate.

2. In the same pan sauté the snow-peas for 7 minutes and keep aside.

3. In the same pan, add the orange juice, mandarine, ginger and sugar let is simmer for 5 minutes, add salt and pepper to taste, reduce heat to low.

4. Add the chicken and stir around, add the dissolved corn starch in and turn the heat off.

5. Add the snow-peas, when serving and drizzle sesame seeds and the mandarine zest.

Tips:

1. Serve with white rice.

2. The same recipe can be done with any poultry.
