Carpaccio & Arugula
This is one that is a crowd pleaser and so easy to make... Wow anyone with it with not much effort.
This recipe yields appetiser size for 4 people.
Ingredients:
200 gr. beef tenderloin
1 tablespoon of lemon juice
2 tablespoons of olive oil
4 tablespoons of parmesan shavings
4 bunches of arugula
4 tablespoons of toasted pine nuts
Salt & Pepper to taste
Directions:
1. Half freeze the beef, so thin cuts can be make easily (almost paper thin). Place in a glass container.
2. In a bowl mix together the: oil, lemon juice. Drizzle the dressing on the meat and let marinate for 10 minutes.
3. Add a little of the dressing to the arugula.
4. Serve meat on a dish, place the arugula then sprinkle the parmesan and the pine nuts.
Tips:
1. Serve with toast or crusty bread.
