Pannenkoeken (Gluten & Dairy Free) with Apples and Raisins
Pannenkoek is the Dutch pancake or the sister of the French crêpe... A little background always helpful...
So I'm a big fan of gluten free recipes that taste better than original recipe, and this is by far much better than any pannenkoek I've ever tried. Get ready, because I'm going to blow your tastebuds off. It is a gluten-dairy-and-sugar free recipe. What else can you want?
This recipe makes 2 big pannenkoeken.
Ingredients:
2 ripe bananas (mashed)
4 eggs
1 teaspoon of cinnamon powder
1/2 apple (thinly sliced)
a pinch of salt
Raisins to top
Directions:
1. In a nonstick pan, cook the slices of apple for 5 minutes and keep aside.
2. Mix all other ingredients together.
3. Spoon the mixture over a nonstick pan, cook for 1 minute lay over the slices of apple, cook for another minute and the turn to cook on the other side.
4. Serve warm with raisins.
Tips:
1. You can added a tablespoon of milk to the mixture to give it a smoother consistency.
2. The banana gives it the sugar you crave for this type of recipe.
3. It can be topped with almonds or any other nuts.
4. Apples can be excluded from this recipe, I just like green apples that gives it a sour contrast to the sweet taste, making it much more fresh.
