Turkey-Pastrami, White Cheese and Cucumber Sandwich
I love cooking, I can spend a whole day in the kitchen and feel completely happy about it; but even I have those days that I just want a quick bite that takes no time to make. On those days, my usual approach is an easy salad or a sandwich, even an omelet and some toast count as a meal.
Today I decided to go for some dainty and chic sandwich, cut into tea-size snacks.
This recipe yields 6 finger long dainty sandwiches.
Ingredients:
4 slices of white casino bread
4 slices of turkey pastrami
4 slices of white cheese
4 slices of cucumber (shaved with a vegetable peeler)
2 tablespoon of mayonnaise
1 tablespoon of pickles (chopped really small)
1/2 dijon mustard
Salt & Pepper to taste
Directions:
1. In a bowl: mix the mayonnaise, pickles, mustard and salt & pepper.
2. Lightly toast one side of all the bread slices, on the toasted side spread the mayonnaise mixture and add 2 slices of turkey pastrami, 2 slices of cheese and 2 slices of cucumber. Top with the other slice of bread and cut into 3 stick-looking pieces.
Tips:
1. Any cut of meat is good specially with the mayonnaise.
2. If you want a vegetarian version: cucumber, tomatoes and cheese are the best combination.
