Chicken & Poached Eggs Salad

After much indulgence the past few weeks, during the holiday, I think is time to balance things out. So this recipe has chicken breast and poached eggs... "who came first the chicken or the eggs?"... All jokes aside, this is a seriously delicious recipe that will fill you up and it is guilt-free.

This recipe yields 2 portions.

Ingredients:

1 head of roman lettuce (chopped)

12 cherry tomatoes (halved)

1 yellow bell pepper (in julienne cuts)

2 whole eggs

2 chicken breast (grilled & sliced)

2 tablespoons of parmesan cheese

2 tablespoon of yogurt

1 tablespoon of mustard seeds

2 tablespoon of lemon juice

Salt and Pepper to taste

Directions:

1. To poach the egg, I usually poach it in it's shell, I just place the egg in boiling water and let it boil for 3 minutes and then immediately place in a recipient with cold water and let it rest 10 minutes, before peeling the shell.

2. In a bowl mix: yogurt, mustard, lemon and season with salt and pepper. This will be the salad dressing.

3. In a bowl place: the lettuce and dress it up then serve it on a plate, add the tomatoes and yellow pepper. Top with chicken and poached egg and sprinkle one tablespoon of the parmesan cheese.
