Asian Beef Salad with Grilled Apricots
Do you know what happens when you are having fun?... Two things: (1) you eat and indulge, and (2) it goes by quick. Reason why this week, I'm taking it easy, cooking light but flavourful, and kept it simple.
This recipe yields 4 portions.
Ingredients:
4 apricots (cut into wedges)
400 gr. of tender beef (sliced thinly)
4 big ripe tomatoes (chopped)
2 tablespoons of peach marmalade
1 tablespoon of black sesame seeds
1 tablespoon of white sesame seeds
3 lettuce heads (chopped)
1 tablespoon of ketchup
1 tablespoon of soy sauce
1/2 cup of lemon juice
Salt and Pepper to taste
Peanut oil to sauté
Directions:
1. Grill the wedges of apricots and set aside.
2. In a pan sauté the beef, add the tomatoes and let cook for 10 minutes. The add marmalade, ketchup, soy sauce and salt and pepper.
3. In a bowl mix the lettuce with the lemon juice and serve into individual portions.
4. Top the lettuce portions with the beef, and sprinkle the sesame seeds. Then add the grilled wedges of apricots.
Tips:
Chicken and pineapple make another great combination. Instead of the marmalade, honey can be added. I used Romain lettuce, but any let- tuce could be used.
