Grouper Papillote with Roasted Tomatoes & Pesto


Grouper Papillote

The most simple recipe you will ever make, a grouper fillet with some vegetables baked for 20 to 30 minutes in a parchment paper rolled in aluminum foil. Meanwhile is baking you can relax and enjoy hassle-free dinner.

This recipe yields 1 portion.

Ingredients:

1 grouper fillet (225 gr.)

1/2 cup of cherry tomatoes

1 cup of fresh basil

1/2 cup of pine nuts

3 tablespoon of parmesan cheese

1/2 cup of olive oil

Salt and Pepper to taste

Directions:

1. Place the parchment paper on top the aluminum foil and then proceed to place tomatoes and fish, season with salt & pepper. Drizzle a spoon of olive oil, close the into a package and bake in the oven on medium heat for 20 minutes.

2. In a food processor add the basil and the pine nuts, while the machine is running drizzle in the the olive oil, once is formed a paste add the parmesan cheese. Keep cool in the fridge.

3. When the fish is cooked serve warn with a spoon of pesto and garnish with fresh basil.

Tips:

1. Accompany with rice or even mixing the pesto with a pasta.

2. Instead of pesto, guacamole would contrast beautifully with the fish.
