Sweet Peas Pesto
Today I bring you a dish that is so classy in flavor and in nature. I don't know I lived so long without it. I'm sure you will feel the same once you try it.
Life is so much better when it has salmon in it. Smoked salmon is my favorite, and my other favorite thing is home-made pasta which you can get the recipe by clicking here.
This recipe yields 4 portions.
Ingredients:
400 gr. of smoked salmon slices (cut into strings)
2 cups of green peas (frozen)
2 tablespoons of fresh dill (chopped)
1 clove of garlic (roughly chopped)
2 tablespoons of lemon juice
2 tablespoons lemon zest
1 cup of extra virgin olive oil
Directions:
1. In a pan simmer some water just to bring the green peas into soft texture and temperature.
2. Drain the peas and set aside 2 tablespoons of peas for garnish the plates.
3. The rest of the peas go into the blender, with the garlic, lemon juice, zest and dill, season with salt and pepper and start processing, while the blender is running, drizzle in the olive oil bit by bit.
4. The pesto should be mixed with the warm pasta, show some salmon strings and a few peas, dress with more oil if necessary.
