Roasted Sausage & Vegetables
I know a lot of people consider Sunday as the lazy day, but for me it has to be Mondays... Mondays are like the end of summer, the end of a vacation... a lot of good memories and feeling blue... What better to combat the Monday's blues that by being lazy and feeling good about it. This recipe is that... all goodness and zero nonsense.
This recipe yields 2 portions (with option of leftovers).
Ingredients:
6 all beef sausage links (previously boiled)
5 medium potatoes (peeled & chopped)
1 small pumpkin (peeled & chopped)
20 cherry tomatoes (washed & edges cut)
2 cups of fresh spinach (chopped)
1 cup of cooked gnocchi (this is optional)
1 tablespoon of fresh rosemary
3 tablespoons of olive oil
3 tablespoons of butter
Salt & pepper to taste
Directions:
1. Cover the bottom of a oven tray with the oil, add all vegetables except the spinach.
2. Sprinkle the salt, pepper and rosemary and add the butter.
3. Bake for 40 minutes on medium heat and the add the spinach and sausages, bake for another 20 minutes.
4. Poking the vegetables with a fork making sure they are fully cooked.
Tips:
1. Any vegetables goes with this recipe.
2. This would also be with roasted chicken and a gravy, for a fancier take on the recipe.
