Spinach & Pumpkin Salad


Spinach & Pumpkin

I needed this salad and I have promised myself to go through a 14 day clean eating challenge, just to get out of the festive eating I've been, so this is the 1 recipe of 13 more to come.

This recipe yields 2 portions.

Ingredients:

300 gr. pumpkin (peeled and chopped)

400 gr. spinach

100 gr. arugula

8 radishes (sliced)

1/2 cup of pumpkin seed

1/2 cup of raisins

Olive oil

1 lemon (juiced)

2 tablespoons of mustard seed

1/2 tablespoon of honey

1 teaspoon of raz al hanut spices.

Directions:

1. Roast the pumpkin in the oven with a bit of olive oil, salt, pepper and raw al hanut. Let it cool.

2. In a small bowl, bring the mustard seeds, honey and lemon, this will the dressing.

3. In a salad bowl, add the rest of the ingredients and dress the salad.

Tips:

1. This is a great salad to accompany it with grilled chicken or fish.
