Brussels Sprouts & Leek Casserole
This is a recipe that I followed from my-forever-crush: Jamie Oliver. So naturally this is a killer recipe. I made it over the holidays for a dinner with friends and it was a success, it was gone really quick. Sprouts are not usually the dish that first disappear on the table, but this recipe I guarantee you will.
As I mentioned yesterday, I'm going through a 14 day clean eating challenge, trying to avoid carbs, and eating as much protein and vegetables as possible. This is day 2 and it is looking pretty good.
Ingredients:
500 gr. of Brussels Sprouts (sliced thinly)
100 gr. of Leeks (sliced thinly)
1 Yellow onion (chopped)
1 clove of garlic (mashed)
1 tablespoon of salt
1/2 tablespoon of pepper
1 tablespoon of Worcestershire sauce
300 gr. minced beef
1 stick of butter
2 sprigs of Sage
Pomegranate to garnish
Directions:
1. In a frying pan add the butter, and sauté onions, garlic, Brussels sprouts, leeks. Once cooked, add the beef and cook. Add salt, pepper, sage and the Worcestershire.
Tips:
1. This could easily be a the filling of shepherd's pie.
