Codfish, Roasted Carrots & Salad
This is going to be one of those recipes, you just throw in the oven, set a timer and done. Because I'm cooking small quantities, I managed to roast all in the over in one pan. This is recipe number 3 of 14.
If you haven't read my previous posts, let me catch you up. I'm doing a 14 day low-carb challenge, just because I over indulged during the holidays and I want to feel light, after the 14 days I will re-introduce the pasta and rice dishes to my life.
This recipe yields 2 portions.
Ingredients:
400 gr. of Codfish
2 lemons (juice & zest)
Olive oil
Rosemary sprigs
8 medium carrots (peeled)
15 Cherry tomatoes
100 gr. of rucola
1 cucumber (seeded and chopped)
6 radishes (sliced)
Salt & Pepper to taste
Directions:
1. Season the carrots with salt and pepper drizzle with olive oil and bake for 10 minutes.
2. In a aluminium sheet place the codfish, season with lemon, rosemary salt and pepper and close the pouch and bake for 10 minutes.
3. In a bowl mix tomatoes, rucola, cucumber and radishes, season with salt, pepper, lemon and olive oil.
Tips:
1. I used different color carrots and also cherry tomatoes.
