The Curacao Homage
Recipe 4 of 14... Today I was craving some "criollo" food, so I healthy-fieded by tweeting the carbs a little bit.
As you can see from the picture, at least 50% of the plate is plain vegetables, followed by protein.

The grilled chicken was only season with Salt & Pepper.
The red beets will just boiled, season with salt and pepper at the end.
To the quinoa I just added a pinch of salt and 1 teaspoon of turmeric.
The real recipe here is the cabbage stew and I'm gonna tell you how.
Ingredients:
300 gr. of yellow and red cabbage (thinly sliced in strings)
1 green apple (peeled & chopped)
1 yellow onion
1/2 cup of vegetable broth
1 teaspoon of tomato paste
1 Bay leaf
Salt and Pepper
Directions:
1. Add all ingredients in a pot and bring to a simmer over low heat, for 1 hour.
