Avocado "Pesto" (Aioli) & Hard Boiled Egg Crumble Spaguetti
To continue on my Italian-note, I whipped out this delicious and easy spaghetti. My favorite type of pasta. This recipe is pretty simple. I feel guilty calling it a recipe.
I used store-bought pasta, cooked al dente and kept aside while I boiled and egg until hard. In a blender I have some avocado chunks, cilantro, and the juice of one lemon salt and pepper, while the blender is running I drizzled in half a cup of extra-virgin olive oil. Mixed the avocado "pesto" or should I say the avocado aioli with the spaghetti and then crumbled the eggs on top and that was it, folks!
It literally took me 15 minutes to put dinner on the table.
