Tortilla de Patatas
When I was in Spain earlier this year, I had tortilla almost every day for breakfast, it is filling and nutritious, for me, was also nostalgic, a staple of my childhood.
My Abuela (grandmother) emigrated to Venezuela from Cuba and married my Lebanese Grandfather. In her journey from one country to the other she met with a Spanish lady (whom we've always called Sra. Maria- Mrs. Maria), who soon became her best friend, they've maintained their friendship for the last 50 years of their lives.
Through the years they've taught each other a thing or two, and one of the staples of my Cuban-grandmother is the Spanish tortilla. Feeling nostalgic, decided to satisfy the cravings, both my stomach and my memories!
This recipe makes a tortilla for 6 people.
Ingredients:
1 yellow onion (chopped)
4 medium potatoes (sliced)
7 eggs (beaten)
3 tablespoon of green onions (chopped)
olive oil to cook
Salt & Pepper
Directions:
1. In a nonstick pan, sautée the onions in olive oil until transparent, add the potatoes and fry for 5 minutes, season with salt and pepper, add 1/2 cup of water and put a lid on let it cook for 10 minutes.
2. In a bowl add the eggs, green onions, and the potatoes, mix well and quick so the eggs don't cook in the bowl, then added back to the nonstick pan and cook for 10 minutes with the lid on and low heat.
3. When the underside of the tortilla is done, cover the pan with a plate to turn it around and cook 2 minutes on the other side.
Tips:
1. I always accompany the tortilla with bread and cheese, to make sandwiches.
