Burger with Curry-Lemon Mayo & Pickled Cucumbers

Lately, my Instagram feed looks like a huge burger-joint took over. I've been seeing burgers passing me by the whole week, so finally, in the weekend I gave in and decided to kill the craving with a beautiful burger. This burger I decided to name the global burger, just because many of the components of it are from different origins, and I love that!

I also pickled my own cucumbers with fresh pineapple juice. I ran out of mayonnaise so, logically I decided to make my own mayo, after all, I had all the ingredients, I made mayonnaise with a curry & lemon flavoured. Are you ready for the burger journey? Let's go...

This recipe yields 4 burgers.

Ingredients:

4 bread buns (not specifically for burgers, potato buns are the best option)

8 slices of gouda cheese

500 gr. of ground beef

2 tablespoons of ras al hanout spices

1 tablespoon of salt

1 tablespoon of ground black pepper

1 ground yellow onion

1 teaspoon of dry basil

1 teaspoon of dry red chili flakes

1 teaspoon of dry oregano

2 tomatoes (sliced)

1 big cucumber (the seedless type)

2 cups of fresh pineapple juice

1/2 cup of apple vinegar

3 tablespoon of sea salt

2 egg yolks

2 tablespoons of lemon juice

1 tablespoon of dijon mustard

1 tablespoon of powder curry

1 tablespoon of powder turmeric

1 cup of melted coconut oil (melted and kept warm)

1 cup of olive oil (cold, put in the freezer for 10 minutes)

1 teaspoon of salt

Directions:

1. Let's start with the pickling first, this could be done 2 days in advance. Wash and slice the cucumber and place in a container with a lid. Add the sea salt, the pineapple juice, the vinegar, mix well and cover with lid and keep refrigerated.

2. For the curry mayonnaise. In a food processor add the yolks, lemon juice, a teaspoon of salt, curry, and turmeric, dijon mustard, start the machine and drizzle in the olive oil, once it is incorporated, while keeping the machine going, add the warm coconut oil, place in a container and keep refrigerated.

3. Season the meat with ras al hanout spices, salt and pepper, and the onion. Mix well and make 4 patties. Cook in a pan, once both sides are done add a slice of cheese and sprinkle with basil, red chili, and oregano and let melt.

4. While the patties are cooking, in another pan toast the insides of the buns and add a slice of cheese on the upper part of the bun and let it melt and toast.

5. To assemble the burger, add a bit of the mayo on each side, add patty, lettuce, tomatoes, and pickled cucumbers.

Tips:

1. The pickles would be done within one hour, but the longer you leave it to pickle the better.

2. Adding the warm coconut oil to the yolk mixture just creates a silky and smooth mayonnaise.

3. I've grown used to eat my fries with mayonnaise, so this recipe was a treat.

4. Store bought fries are more than ok, I baked them instead of frying them.

5. The cheese on top of the bun becomes a crusty but still maintaining the soft from the bun.
