Vegetarian Pasta Bowl
For my meatless-Monday I decided on this recipe. Anything with pasta is good, that's my rule.
This recipe yields 2 portions.
Ingredients:
1 eggplant
1 cup of rucola
1/2 cup of olives
1/2 cup of tomato
1/2 cup of garbanzo beans
1 avocado
1/2 cup pasta
2 tablespoons of yogurt
2 tablespoon of sriracha
Salt & Pepper to taste
Paprika powder to taste
1 Lemon juiced
Directions:
1. Cook pasta to instructions, and rinse with cold water to keep it from overcooking.
2. Peel, and slice the eggplant, sauce in a non-stick pan until cooked.
3. Season garbanzo with salt and pepper and paprika.
4. Slice the avocado, or chop it.
5. Arrange all ingredients in a plate drizzle the yogurt, sriracha and lemon.
Tips:
1. The yogurt brings a cooling element to the sriracha.
