Holiday Feast
I posted this picture I a few days ago on Instagram and my plan was to write the recipe on Sunday, well Sunday didn't happen... but hey! is never too late to send some recipes out. Especially for the holiday season coming our way.
To be honest, this looks like an elaborate dinner, but I kid you not, it is the simplest meal ever, as long as there is an oven around. In the picture we have: asparagus with mushroom and pomegranate seeds, roasted vegetables (carrot, broccoli, sweet potatoes and normal potatoes), gravy, roasted chicken drumsticks, roasted turkey breast and rice with minced meat, believe me, it is all easy, read ahead to find out how.
This recipe yields 4 portions.
Ingredients:
200 gr. of potatoes (chopped)
200 gr. broccoli (chopped)
200 gr. sweet potato (chopped)
200 gr. carrot (chopped)
200gr. asparagus
2 cups of mushroom (chopped)
2 tablespoon of pomegranate seeds
2 tablespoon pine nuts (toasted)
4 Chicken drumstick (wash and season with salt and pepper)
4 Turkey breast (season with salt and pepper)
1 cup of white rice
200 gr. of minced meat
3 cups of beef stock
1 tablespoon flour
1 stick of butter
Directions:
1. In a pan saute the asparagus in a bit of olive oil, season with salt and pepper until al dente. Keep separate and sautee the mushrooms in the same pan. Serve together on a plate sprinkle some pomegranate seeds (for color and freshness) and the pine nuts for some texture.
2. In an oven tray add the chopped vegetables and the drumstick as well the turkey breasts. Drizzle with a bit of olive oil and roast in the oven for 30 to 40 minutes on medium high, once cooked, remove and add butter to the same tray 1 tablespoon flour cook for 2 minutes and then add one beef stock. Vegetables, chicken, and gravy ready at once.
3. Lastly, brown the minced beef in a pan with a bit of olive oil, then add the rice, season with salt and add the 2 cups of beef stock.
Tips:
1. To make it even simpler adding the mushrooms and asparagus to the tray is possible.
2. Instead of beef stock, milk or cream could be added.
3. Toasted pine nuts could be added to the rice as well.
