Roasted Turkey with Citric Marinated
The idea was for me to post this recipe during the holiday season, but between the holiday blues and the business I left the post accumulate till now.
I want to propose this recipe as a holiday recipe for a group of 4 to 6 people but also to be the main protein for several week meals for 1 person.
Ultimately, this recipe can be also done with chicken instead of turkey.
Ingredients:
1 whole bird (chicken or turkey approximate 2 kg)
1 cup of yogurt
1 cup of parsley (chopped)
1 cup of cilantro (chopped)
5 cloves of garlic (mashed)
1/2 cup of grapefruit juice
1/2 cup of orange juice
2 tablespoons of salt
1/2 tablespoon of pepper
Directions:
1. Add all the ingredients to the bird, and let it marinate over night.
2. Roast the turkey on medium heat covered for 40 minutes, then uncover and broil quickly for 10 minutes.
Tips:
1. Serve with rice pilaf or mashed potatoes.
2. Debone and use as the main protein of other dishes. Such as arroz con Pavo (recipe coming soon).
Add salad or veggies aside.
