Alton Brown's Devilled Eggs
If you follow the food network channel (from the US programming), you'll come across Alton Brown. A scientist turned into a chef. He is a genius, and that's an understatement.
This recipe is directly from his collections.
Recipe is pretty simple:
1. Separate egg yolks from egg whites.
2. Season the whites, and whisk until combined. Then pour over a greased pan and cover with aluminum foil and cook in the oven until done.
3. For the yolks; season and cook in pan on the stove just as you would cook scrambled eggs.
4. Then, bring the scrambled yolks to a food processor, add mayo, and the seasoning of your liking.
5. Cut the egg whites, into bite size and add the yolks on top.
I added some spicy paprika and curcuma and served with a hint of Sriracha.
It is a sophisticated take and not to mentioned so much simpler than the conventional deviled eggs.
