Burrata Salad
One of the things I enjoy the most in the summer is making all types of gorgeous salads that be indulgent. This salad is one of those dishes that again, and again, just delicious!
This recipe yields 4 portions.
Ingredients:
4 balls of burrata cheese (about 250g each)
4 medium tomatoes, sliced
2 medium cucumbers, sliced
100g arugula
2 tablespoons pine nuts
For the dressing:
2 tablespoons Dijon mustard
2 tablespoons honey
4 tablespoons extra virgin olive oil
Salt and pepper to taste
Directions:
In a small bowl, whisk together the Dijon mustard, honey, extra virgin olive oil, salt, and pepper until well combined. Set aside.
Toast the pine nuts in a dry skillet over medium heat for a few minutes until they become golden brown. Keep an eye on them as they can burn quickly. Remove from heat and set aside.
Arrange the arugula on a large serving platter or individual plates. Place the sliced tomatoes and cucumbers over the arugula. Carefully place one ball of burrata cheese on top of each salad.
Drizzle the Dijon mustard and honey dressing over the burrata and vegetables. Sprinkle the toasted pine nuts on top of the salad.
Serve immediately and enjoy the creamy, flavorful Burrata Salad with the added crunch of pine nuts.
