Chicken in Apple Sauce
This is a recipe that I learned at a very young age (12 years old), all the way back in Caracas- Venezuela. Lately, I felt a bit nostalgic, so I decided to go for a simple yet delicious dish.
This recipe yields 2 servings.
Ingredients:
1 Yellow Onion (diced) 2 stalks of celery (diced) 1 red bell pepper (diced) 1 stalk of leek (diced) 300 gr. of Chicken Drumstick
1 cup of green olives (diced)
olive oil to sauté
1 teaspoon of cinnamon
2 garlic cloves (mashed) 1 bunch of cilantro (coriander)
1 green bell pepper (chopped)
2 apples (peeled & chopped) 1 cup of Jasmin Rice 1 cup of apple sauce (or apple compote) 1 teaspoon of turmeric Salt & Pepper to taste
Directions:
In a pan sauté the onion, garlic, celery, half of the cilantro, red & green bell pepper, leek, apples. Season with salt and pepper, add turmeric and cinnamon. This should cook for about 10 minutes, on medium heat.
Add the chicken, apple sauce and 1 cup of water, cover the pan with the lid and let it simmer on low heat for one hour. Turn the heat off and add the olives.
Cook the rice as you would normally do. Serve together or as a side dish, garnish with sliced apples and the rest of the cilantro.
Tips:
Not a fan of rice, then make a mashed potato.
Looking for a lower calorie option, get chicken breast instead. Or take the skin of the drumsticks out.
Not too fond of olives? Then capers, also not fond of capers, then 3 tablespoons of lemon juice.
