Mango-Avocado & Shrimp Salad

Ingredients:
500g cooked shrimp, peeled and deveined
2 ripe avocados, diced
2 ripe mangos, diced
1 head of lettuce, chopped
1 red onion, thinly sliced
1/2 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1/4 cup white vinegar
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup extra-virgin olive oil
Directions:
In a large bowl, combine the cooked shrimp, diced avocados, and diced mangos. Gently stir to combine (you don't want guacamole).
In a separate bowl, whisk together the lime juice, orange juice, white vinegar, minced garlic, salt, and black pepper until well combined. Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified.
Pour the ceviche dressing over the shrimp, avocado, and mango mixture. Toss gently to coat.
Add the chopped lettuce and thinly sliced red onion to the bowl and toss again to combine.
Serve immediately and enjoy this delicious and refreshing salad!
