Mantu (Afghan Dumplings)

Give me this dish any time of the week, how many times you want to. It is just delicious and comforting on so many levels. This recipe has 3 parts.
This recipe yields 4 portions.
Ingredients:
400 gr. of minced beef
Chinese wonton wrappers
1 big yellow onion (chopped)
3 cups of greek yogurt
2 tablespoon of za'atar
1 lemon (juice and zest)
400gr. canned crushed tomatoes.
2 tablespoons of harissa paste
300 gr. of lentils (cooked)
Salt & Pepper
Olive oil to sauté and plate
Directions:
Cook the meat in a bit of olive oil, season with salt and pepper and a bit of za'atar, once the meat is fully cooked add the onion, and let it cool down.
Stuff the round wonton wrappers with the meat mixture and close into moon-shapes. Set a side.
In a bowl add the yogurt, za'atar, lemon juice and zest, mix and set a side.
In a pan, add the cooked lentils, harissa, crushed tomatoes, season with salt and pepper. Simmer for 10 minutes, until thickened.
Boil the dumplings until cooked (around 3 minutes)
In a plate add a layer of the yogurt, a layer of the dumplings, the lentil mix, and a bit more of yogurt. Drizzle some olive oil, and some za'atar.
