Mashed Potatoes with Spinach & Meatballs (in a curry-coconut sauce)
Comfort food all the way, with little effort.
This recipe yields 4 portions.
Ingredients:
500 gr. potatoes (peeled & chopped)
400 gr. Spinach leaves
500 gr. minced meat
1 big yellow onion (chopped)
300 gr. mushrooms
300 gr. coconut milk
1 teaspoon of: turmeric, dry coriander, chilli powder, cumin powder
Vegetable oil for sautéing
3 garlic cloves (mashed)
1 sprig of lemongrass
Salt and Pepper
Directions:
In a pan add the potatoes, spinach add water just half way through the pan to boil the potatoes. Once completely cooked, mash it. Seasons with salt and pepper.
In a bowl mix meat, onions, salt and pepper. Form meatballs, cook in the oven for 15 minutes (or until cooked)
In another pan, add the oil, turmeric, dry coriander, chilli powder, and cumin powder, sauté for 5 minutes ad garlic, lemongrass (previously bruised), sauté for another 10 minutes, add the mushrooms. Then add the coconut milk. Lower the heat and simmer. Add salt and pepper to taste.
Add the meatballs to the curry mix and simmer for 10 minutes. Serve on top of the mashed potato.
