Meatballs, Gravy, Mashed Potatoes & Sautéed Veggies
This recipe is a delicious and satisfying meal that brings together tender meatballs, flavorful gravy, creamy mashed potatoes, and vibrant sautéed green beans and carrots (crowd-pleaser and kid's favourite). With a few simple steps, you can create a hearty and comforting dish that your family and friends will love.
This recipe yields 4 portions.
Ingredients:
Meatballs:
500g ground beef
1 small onion, finely chopped
2 cloves of garlic, minced
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Gravy:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef or vegetable broth
Salt and pepper to taste
Mashed Potatoes:
1kg potatoes, peeled and cut into chunks
1/2 cup milk
2 tablespoons butter
Salt and pepper to taste
Sautéed Green Beans and Carrots:
250g green beans, trimmed
250g carrots, peeled and sliced
2 tablespoons olive oil
2 cloves of garlic, minced
Salt and pepper to taste
Directions:
In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated. Shape the mixture into meatballs, about the size of a golf ball. You should get around 16 meatballs.
Heat a large skillet over medium heat and add a drizzle of olive oil. Cook the meatballs in batches until browned on all sides and cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter for the gravy. Stir in the flour and cook for a minute until lightly golden. Gradually whisk in the broth, scraping any browned bits from the bottom of the skillet. Cook until the gravy thickens. Season with salt and pepper to taste.
Meanwhile, in a large pot, boil the potatoes until tender. Drain and return them to the pot. Add the milk, butter, salt, and pepper. Mash the potatoes until smooth and creamy.
In a separate pan, heat olive oil and sauté the green beans and carrots with minced garlic until they are tender-crisp. Season with salt and pepper.
