Not Ramen Soup
Okay, like the title says, this is not ramen soup, not by any approximation, this a very loose, very westernised interpretation of what ramen is. After this disclaimer, let me say, if you are looking for light and flavourful lunch that can be eaten at home or taken to work/school, this is it.
This recipe yields 4 portions.
Ingredients:
1 pack ramen noodles
4 eggs
200g. broccolini
200g. multicolour bell peppers (chopped)
4 garlic cloves (sliced thinly into chip-like)
2 tablespoons of vegetable oil
100gr. pumpkin ravioli
2 vegetable bouillon cubes
1 sprig of green onion (chopped and for garnish and freshness)
Directions:
In a pan, sauté with oil the garlic, until light brown, the take spout and set aside. Add the broccolini, and cook until desired doneness, I like it to have some crunch and the same goes for the peppers.
Boil the eggs to desired doneness, mine are 7 minutes eggs.
In another large pan, fit for soup, add the bouillon cubes and 6 cups of water, bring it to a boil and cook the noodles and ravioli.
Once the noodles and ravioli are cooked, plate it and add the vegetable ingredients as toppings, season with salt and pepper.
