Pannenkoek with Strawberry, Blueberry & Chocolate
Oh yes, the much beloved Dutch treat. Pannenkoeken are thing pancakes, resembling more a French crêpe.
Treat your better half with this Dutch classic or just yourself.
This recipe yields 8 pancakes.
Ingredients:
300 grams of flour
3 eggs
500 ml of milk
pinch of salt
butter for baking
Directions:
Place the flour in a bowl and add a pinch of salt. Make a well in the center and beat the eggs in it. Add about ¼ of the milk and then mix until smooth. Add the rest of the milk little by little and mix to a smooth pancake batter.
Heat a little butter in a pan. Add a spoonful of batter into the pan with a ladle and let it flow. When the top is dry, i.e. has solidified, and the bottom has a nice colour, you can turn it over with a spatula or with the lid of a pan.
Bake the other side of the pancake until brown. Place on a plate and keep the pancakes warm under a plate and bake the rest as well.
Sprinkle sweet pancakes with chocolate zest, add the strawberries and blueberry.
Tips:
Instead of butter margarine can be used.
The beauty of pannenkoeken, is that the toppings are endless, some of my favorites includes: turkey bacon, apple, raisins and/or cheese.
When adding the batter to the pan, after half a minute (if the pancake is not completely set), add some thin slices of apple, raisins and/or turkey bacon, so it cooks within the batter.
More sweet toppings: syrup, icing sugar, or even honey.
