Perico (Scrambled Eggs with Onions & Tomatoes)

Perico is a Venezuelan egg-scramble, prepared with onions, tomatoes and sometimes green pepper, usually made as filling for arepas. The name is elusive to the bird (parakeet), which also is very colourful.


This recipe yields two portions.


Ingredients:

Vegetable Oil (sautéing)

¼ cup finely chopped onion

¼ cup of tomato chopped into small squares

5 eggs

1 pinch of salt

pepper to taste


Directions:

  1. In a frying pan add the oil, the onion and sauté for 3 minutes.

  2. Add the tomato without letting it become sauce.

  3. Add the eggs, the pinch of salt, the pepper.

  4. Mix the elements until everything is mixed and cooked.

Tips:

  1. Depending on your preference, you can replace the oil with "anato" oil and give color to the preparation.

  2. Ham, sausages or even bacon can be added.
