If you're a fan of Lebanese cuisine, you'll love this family recipe for Lebanese Rice with Chicken and minced beef (Riz w D’jaj). I'm obsessed and addicted to this dish, and I'm excited to share it with you. The combination of fragrant spices, tender chicken, and flavorful minced beef creates a delicious and comforting meal that's perfect for any occasion. Besides the traditional recipe, this dish is also enhanced with almonds, cashews and pine nuts, which add a delightful crunch and nutty flavor. Trust me, once you try this Lebanese rice with chicken and minced beef, you will be obsessed too.


Ingredients:


1 cup Basmati rice

2 boneless chicken breasts (pulled)

300 g. minced beef

1 onion (chopped)

1 garlic clove (minced)

1 tablespoon olive oil

1 teaspoon ground cinnamon

1 teaspoon ground allspice

1 teaspoon ground cumin

Salt and pepper, to taste

2 cups chicken broth

1/4 cup slivered almonds, toasted

2 tablespoons fresh parsley, chopped


Directions:


  1. Rinse the rice several times until the water runs clear and let it soak in water for 30 minutes.

  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is translucent.

  3. Add the cminced beef. Cook for 5-7 minutes until beef are browned and fully cooked.

  4. Add the cinnamon, allspice, cumin, salt, and pepper. Stir for a minute until the meat is coated with the spices.

  5. Add the rice to the pot and stir for a minute until coated with the spices. Pour in the chicken broth and bring to a boil.

  6. Reduce the heat to low and cover the pot. Let it cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.

  7. Remove from heat add the pulled and let it sit for 5 minutes.

  8. Fluff the rice with a fork and add the toasted almonds, pine nuts, and fresh parsley.

  9. Mix well and serve hot, I usually drizzle lemony yogurt and a sprinkle of paprika powder.
