Spaghetti with Sujuk

This is a quick sauce, made from ingredients that most probably you have already at hand in your pantry (cupboards). Also very loosely based on the well-known Italian "amatriciana" sauce.


This recipes yields 2 portions.


Ingredients:

1 Yellow Onion (chopped)

500 gr. tomatoes (peeled & chopped)

1/2 cup of dry white wine (optional)

250 gr. spaghetti 1 tablespoon of grated parmesan cheese

200 gr. turkey bacon (chopped)

1 stalk of thyme (chopped) 2 tablespoon of olive oil Salt & Pepper to taste


Directions:

  1. In a medium frying pan, heat the oil. Add the bacon and onion, and cook over moderate heat, until the onion is golden and bacon has rendered the fat (about 8 to 10 minutes).

  2. Add the wine to the bacon and onion, raise the heat and cook it rapidly until the liquid drys off. Then, add the tomatoes, thyme, salt and pepper. Cover and let it simmer for 5 minutes.

  3. In the meantime, bring a large pan of water to boil. Add salt to the boiling water, and cook the pasta al dente (see pasta package instruction). Drain, toss in with the sauce, and server warm with grated Parmesan cheese.

Tips:

  1. Using an Italian sausage is also a great option, especially if it is spicy. I’ve also used Turkish sausage for this dish.

  2. Or just adding a bit of heat with some red peppers.
