Spinach Salad Dressing

Trying to eat more veggies, and inserting veggies in every way possible.

This dressing is inspired by all the social media green-goddess salad recipes I see all over the place.

Here we go...


Ingredients:

2 cups of baby spinach leaves

1 small onion (chopped)

2 garlic cloves

1 teaspoon of Dashi (Japanese stock)

3 tablespoons of greek yogurt

1 bunch of dill

salt & pepper


Directions:

  1. In pan with boiling water, immerse the spinach for 2 minutes and then drain and wash with cold water, or immerse in a bowl with icy water (blanching).

  2. In a blender, add the spinach with the rest of the ingredients and blend until smooth.

  3. Drizzle this on anything from salad or fish.

Tips:

  1. This dressing stays good for about 2 to 3 days, but I sought it will last that long.

  2. Instead of dashi, a bouillon cube, miso, or fish sauce and soy sauce, can be a substitute
