Steak Burger
Another day, another burger, that's what I say.... call me crazy, but developing some serious burger recipes it is quite fun!
This one: meat patty is half ribeye, half shoulder, it is a sturdy beef patty, almost like steak texture, The cheese is gouda with cumin seeds, the bread is made with brown flour and oats (which I bought in my local bakery)... there’s no lettuce instead there are radish’s leaves... sauce condiment: my very own version of whisky sauce...
So let's go! This recipe yields 4 patties, and enough sauce to go around.
Ingredients:
For the Burger Patty:
200g. Ribeye Steak (don't trim the fat)
200g. Shoulder Steak
Salt & Pepper
For the Whiskey Sauce:
2 tablespoon vegetable oil
1 tablespoon butter
1 small onion (finely chopped)
500ml cooking cream
2 teaspoon wholegrain mustard
1 teaspoon Dijon mustard
2 tablespoon Apple Cider
Sea salt and freshly ground white pepper
1/2 lemon (juice only)
Directions:
If you have a food processor/or meat grinder proceed to grind the meat. If not ask your butcher to grind it for you.
Form 4 patties and once you are ready to cook, season from the outside with salt & pepper.
For the sauce: in a pan add the oil and butter and cook the onions until transparent, turn the heat to low and add the apple cider, and simmer for 5 minutes, then add the cooking cream, and let it simmer for another 5 to 7 minutes. Once the sauce has thickened, add mustards, lemon juice and season with salt and pepper.
Tips:
Instead of whiskey or apple cider, apple juice or even beer can be added.
