Steak Tacos with Tzatziki
Summer is finally here (I think), and what better way to celebrate than with some delicious steak and peppers tacos? And even though it’s technically Wednesday and not Taco Tuesday, we won’t let that stop us from enjoying some tasty tacos! So let’s get cooking and enjoy some delightful tacos, any day of the week!
Ingredients:
500 gr. flank steak, sliced into thin strips
1 red bell pepper, sliced into thin strips
1 yellow bell pepper, sliced into thin strips
1/2 medium onion, sliced into thin strips
1 tbsp. olive oil
1 tsp. chili powder
1 tsp. cumin
Salt and pepper
8-10 flour tortillas
1/2 cup cherry tomatoes (halved)
For the tzatziki sauce:
1 cup plain Greek yogurt
1/2 cup grated cucumber
1 clove garlic, minced
1 tbsp. lemon juice
1 tbsp. chopped fresh dill
Salt and pepper
Directions:
Preheat a large skillet over medium-high heat.
Season the steak strips with chili powder, cumin, salt, and pepper.
Add olive oil to the skillet and cook the steak strips until browned and cooked through, about 5-7 minutes.
Remove the steak from the skillet and set aside.
In the same skillet, cook the onion and bell peppers until tender-crisp, about 3-5 minutes.
Add the cherry tomatoes to the skillet and cook for an additional 1-2 minutes until they start to soften.
To make the tzatziki sauce, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl. Stir to combine.
To assemble the tacos, divide the steak, peppers, onions, and cherry tomatoes evenly among the tortillas.
Top each taco with tzatziki sauce.
Top with parsley and add lemon wedges to drizzle.
