Sujuk Eggs
To fry the eggs in the chorizo or not... That's the dilemma.
I love eggs and I love lazy weekends, and I love breakfast in bed. This breakfast is both indulgent and fresh. Perfect for two or just one...
This recipe yields 2 portions.
Ingredients:
1 cups Greek Yogurt
1 tablespoon of za'atar
1 tablespoon of olive oil
1 tablespoon of mixed olives
1 cup of cherry tomatoes
1 cup of chopped uncooked sujuk (Turkish sausage)
4 medium eggs
4 small tortilla wraps
Sal & Pepper to taste
Directions:
Fry the sujuk (no oil needed), it will release its own fat, once cooked and crispy, crack the eggs on top, cook the eggs to your liking, I like them sunny-side-up. Don't season, as the sujuk will have enough flavours.
In a plate spread half of the yogurt, sprinkle with half of the za'atar, drizzle half of the olive oil and olives, crush salt & pepper. The other half into another plate.
Chopped the tomatoes and arrange half in each plate.
Toast the tortillas over open fire and serve.
Tips:
At home we like the eggs on different doneness, you could use two pans to make two different sets, but I don't like washing dishes, for over well eggs, I add them first, once I flip them I then add the sunny side ups.
This breakfast paired with Arabic tea is a great combination.
