Tostones con Salsa Verde

Ingredients:
For the Tostones:
3 green plantains
Cooking oil (for frying)
Salt (to taste)
For the Salsa Verde:
1 ripe avocado
1/2 cup fresh cilantro leaves
Juice of 1 lemon
Salt and pepper, to taste
1 tablespoon ranch powder mix
2 tablespoons milk
Directions:
Peel the plantains by cutting off the ends and making a shallow cut along the length of each plantain. Gently remove the peel.
Cut the plantains into thick slices, about 2-3 cm in thickness.
Heat cooking oil in a large frying pan over medium heat. Add the plantain slices to the pan and fry them in batches until they are golden and crispy on both sides. Remove them from the pan and place them on paper towels to drain excess oil.
Once the plantains have cooled slightly, use a tostonera (plantain press) or the bottom of a glass to flatten each fried plantain slice.
Return the flattened plantains to the hot oil and fry them again until they are golden and crispy. Remove them from the pan and place them on paper towels to drain excess oil. Sprinkle with salt to taste.
To make the Salsa Verde, scoop out the flesh of the avocado and place it in a blender or food processor.
Add the cilantro leaves, lemon juice, salt, pepper, ranch powder mix, and milk to the blender. Blend until smooth and creamy. Adjust the seasoning to taste.
Note: This recipe yields enough Salsa Verde for approximately 4 servings of Tostones. Adjust the quantities as desired to suit your taste preferences.
