Ingredients:
300 grams penne pasta
200 grams canned tuna (drained)
150 grams frozen peas (thawed)
200 grams cherry tomatoes (halved)
3 tablespoons mayonnaise
Juice of 1 lemon
Zest of 1 lemon
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Fresh green onions for garnish
Directions:
Cook the penne pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
In a large mixing bowl, combine the drained tuna, thawed peas, and halved cherry tomatoes.
In a separate small bowl, whisk together the mayonnaise, lemon juice, lemon zest, and extra virgin olive oil until well combined. Season with salt and pepper to taste.
Add the cooked and cooled penne pasta to the tuna, peas, and cherry tomatoes. Pour the lemon dressing over the ingredients. Gently toss the salad until all the ingredients are well coated with the dressing. Taste and adjust the seasoning if needed.
