White Asparagus & Ham
A very Dutch dish, simple, full of a good source of vitamins and very easy to make.
This recipe yields two portions.
Ingredients:
2 Eggs (hard boiled and peeled) 160 gr. of Turkey Ham (or any ham of your choice) 1 tablespoon of AP flour
1 tablespoon Lemon zest 1 teaspoon of grounded nutmet
4 tablespoons of butter 1 1/2 cup of milk 300 gr. of Broccoli (in florets)
White ground pepper
500 gr. of White Asparagus (Trimmed and peeled) 300 gr. of Potatoes (peeled and chopped)
Directions
Boiled the potatoes until soft, to make a mashed potato. Once cooked fully, add 1 tablespoon of butter, salt and pepper and mix. Keep warm.
In a pan sauté the asparagus with 1 tablespoon of butter, season with salt and pepper. (approximately 10 to 15 minutes). Keep warm.
When done with Asparagus use the same pan to sauté the broccoli.
In a saucepan, add the remaining of the butter, the flour and cook to make a roux for 3 minutes, then add the milk and mix vigorously, cook until a thick sauce is form, season with salt, nutmeg, white pepper and lemon zest.
Serve with turkey ham and eggs.
Tips:
I like to cook the eggs medium hard, but that’s my preference.
I always garnish with some fresh cut herbs at hand, in this case, cilantro.
The asparagus could be substituted for green beans.
The white sauce can also be made more scrumptious by adding cheese to it.
