Zoodles, Carrots & Meat Balls
This recipe besides being super healthy is also super quick. If you do not have a spiralizer (to make the ribbons of zicchini), check with your local grocery store as they are also sold already made.
This recipe yields 2 portions.
Ingredients:
2 Zucchinis (in noodles)
6 Tomatoes (peeled & chopped)
2 Garlic Cloves (smashed)
1 tablespoon of Oregano Spice
2 egg white (scrambled)
Slices of fresh Mozzarella
2 Carrots (in noodles) 1 Yellow Onion (chopped) 1 cup of Basil (leaves or chopped)
300 gr. Minced Lean Beef 1 tablespoon of Oats Olive oil to cook
Directions:
In a nonstick pan sauté the carrots until tender (approx. 5 minutes), then add the zucchini and cook until tender (approx. 5 minutes). Set aside.
In another pan sauté the onion, garlic, half of the basil and half of the dry oregano in a bit of olive oil, until the onions look transparent. Then add tomatoes and season with salt and pepper, let it simmer until a smooth sauce.
In a bowl combine the meat, oats, egg whites and the rest of the oregano, season with salt and pepper, and form balls. Cook in a nonstick pan without oil. Once they are thoroughly cooked, place the mozzarella on top of each ball, turn the heat off and cover.
Assemble on a plate: the zoodles and the carrot-noodles, add the tomato sauce and the meatballs. Garnish with the rest of the basil.
Tips:
Eventually, this recipe is a canvas to any vegetable (however you like the vegetable) you could also roast them whole and have it with meat- balls.
